PB & J Sorbet

This super simple sorbet is easy to whip up any time of day for a tasty treat in as little as three ingredients. If you have a little sweet tooth, you’ll love this alternative to ice cream. No dairy, gluten, or added sugar involved. Basically, think of it like a dessert smoothie…but better. Oh, you may have noticed that I’m kinda in love with anything PB & J…if you don’t feel the same way, just omit the nut butter for a classic berry sorbet.

Ingredients: (makes 2 servings)

  • 1 cup frozen berries (I use a mix of strawberries, blueberries, and blackberries)
  • 1 heaping teaspoon peanut or almond butter
  • 1/4 cup of almond milk
  • Optional: 1 teaspoon cacoa powder for a slight chocolatey taste
  • Optional: 1/2 cup plain yogurt (Greek for protein, coconut for dairy free)

Simply blend all ingredients together until it’s the consistency of sorbet and enjoy! Feel free to add some toppings, like coconut, chopped nuts, granola, cacoa nibs, etc. for a crunch.

Watermelon Basil Summer Salad

What says summer better than salad watermelon?! This salad will instantly become a summer staple. Soon, any salad without watermelon will seem…incomplete? It’s true. You’ll get it once you try it. Luckily, this one is super simple (like five minutes simple) and the color palette is sure to impress even the most critical BBQ guest. Enjoy!

Ingredients:

  • dark leafy greens
  • watermelon (cut into cubes)
  • feta cheese
  • fresh basil leaves
  • balsamic vinegar

Simply make a bed of dark leafy greens (we used arugula here, but as long as they’re fresh, any type of greens will do the trick.) Add basil leaves, watermelon cubes, and feta and lightly cover with balsamic vinegar. Sprinkle sea salt, black pepper, and toasted hazelnuts if you want to get really fancy. This salad is so fresh, light, and summery that you’ll make it all season long.

Green Cream of Cauli Soup

The simple veggie soup happens to be tasty, hearty, and oh so comforting! Forget mashed potatoes, I give you Green Cream of Cauli Soup, the dish that bridges the gap between comfort food and superfood. Adapted from OHH’s Super Spring Cleanse, it’s like a green juice in a soup. For more detox-friendly recipes and tips, get your cleanse copy now!

Ingredients:

  • 1 head cauliflower cut into pieces
  • 1.5 cups bone broth, chicken broth or veggie broth
  • 1 handful fresh basil leaves
  • 1 clove garlic
  • 1 large handful organic arugula
  • 1/3 avocado
  • 1 teaspoon hemp seeds, nuts of choice, or 1/4 cup Greek yogurt for protein
  • 1 teaspoon olive oil
  • 1 tablespoon nutritional yeast

Here’s what I did:

  • Boil cauliflower in bone broth
  • Add garlic and basil and continue to cook on medium
  • Once cauliflower is soft, transfer entire mixture to your Vitamix or high-powered blender (you may have to wait until it cools depending on what you have)
  • Add remaining ingredients
  • Serve warm, garnish with basil leaf

Delightful Banana Pancakes

As far as pancakes go, these puppies are game changers, proving that healthy pancakes can be yummy pancakes. Delightfully full of protein, fiber, and only a few simple ingredients, they’re the perfect weekend pick-me-up and were a huge hit during our Antigua Adventure!IMG_0247

Ingredients: (makes 1 large/2 small pancakes, simple double/triple recipe for larger batch)

  • 1 banana
  • 1/3 cup coconut flour
  • 2 eggs
  • 1/2 teaspoon cinnamon

Blend or whip all ingredients until consistent – add water or almond milk if needed for consistency. Blending the batter as opposed to stirring it will make the pancakes light and fluffy. Pour batter into pan and top with a few slices of banana (optional.) Flip and serve with maple syrup, butter, or nut butter and/or berries of choice. Enjoy!

Beet & Basil Hummus

In the spirit of DIY’ing, we’re making a simple favorite: hummus. This colorful version is not only bright and beautiful, it’s also full of flavor, healthy goodness, and only real foods (bye bye, chemicals.) Hummus is a well-rounded staple to enjoy often for it’s plant-based protein, carbs, and fat, but this one adds beets and basil for some serious vitamins and minerals (ie: magnesium, iron, potassium, folate, flavonoids, vitamins B & K, and more.) BEET THAT!

Ingredients: (makes one large bowl or ~5 single servings)

  • 2 medium-sized red beets (cooked to soften, I boiled mine for 20 minutes)
  • 1 handful fresh basil leaves
  • 1 cup chickpeas or white beans (I used canned organic, washed)
  • 1/3 lemon (skin and all)
  • 1 clove garlic
  • 1.5 tablespoons pine nuts (or pistachios or cashews)
  • 1 tablespoon olive oil
  • dash of sea salt and pepper

Just blend all ingredients in Vitamix/high-powered blender or food processor until smooth. Serve with crudite and/or whole-grain crackers or chips for the perfect healthy appetizer. Also add to your salads/meals for a colorful boost of healthy flavor!

Pumpkin Treats Two Ways

These are hands-down two of the best pumpkin treats everrrrr invented. Pumkins are not only a fall staple for their color and taste, they also deliver a rich dose of antioxidants to boot. You can feel good about making these treats over and over and over again.

Pumpkin Nut Fudge: (vegan, gluten-free, and can be made sugar free)

  • 1/2 cup pureed pumpkin (I like Farmer’s Market organic pumpkin or you can make your own)
  • 1/4 cup cacoa powder (or cocoa powder)
  • 4 tablespoons coconut oil
  • 2 teaspoons pure maple syrup or honey (optional, omit for sugar free recipe)
  • 1/3 cup nut butter of choice (peanut, almond, and sunflower seed all work great)
  • pinch of sea salt

Instructions:

You’ll need two separate bowls to make the layers. For chocolate fudge, combine cacoa powder, 2 tablespoons coconut oil, and 1 teaspoon maple syrup/honey. Melt briefly (microwave for about 20-30 seconds or use stovetop) and stir fudge until consistent. Pour half of fudge on parchment paper in a square pan. Put in freezer or fridge for 5-10 minutes while making pumpkin layer. For pumpkin filling, combine pumpkin with the remaining coconut oil (2 tablespoons) and maple syrup/honey (1 tablespoon.) In a blender or mixer, add nut butter and sea salt and mix until consistent. Spread this layer on top of fudge once it’s solid and freeze or refrigerate another 5-10 minutes. Once pumpkin layer has solidified, add remaining fudge and refrigerate another 10 minutes before cutting and serving.

*option: for a sweeter treat, simply melt chocolate chips and coconut oil for fudge layer. For a less-rich and more “cookie-like” fudge, add almond meal to fudge layer. Recipe adopted from Detoxinista.

Pumpkin Oat Cookies:

  • 1 cup pureed pumpkin
  • 1/3 cup oats
  • 2 eggs
  • 1 teaspoon cinnamon
  • dash of pumpkin pie spice
  • 2 teaspoons maple syrup or honey
  • 2 tablespoons chocolate chips

Instructions:

Mix or blend all ingredients together, adding chocolate chips last. Scoop spoonfuls of cookie batter onto cookie pan over parchment paper. Bake at 350 degrees for 15-20 minutes until outside becomes crispy.

Healthy Holidays OHH Style

The magic of the holiday season surrounds us and we’re determined to make it through feeling healthy, happy, grounded, rested, well-fed, balanced, and ready for 2016!

IMG_3036Although it’s easy as pie to cut sleep, eat all the cookies, skip breakfast, have another cocktail, and end up completely burned out, tired, bloated, hungover, guilty, and miserable come January, let’s not!

Keep it simple: yes, there will be parties and cocktails, gingerbread, latkes, toasts, roasts, cookie exchanges, peppermint bark, and a hundred reasons to indulge. And that’s ok. But all of those ‘extras’ sure do add up. To offset the indulgences, keep things simple at home. No need to make a three-course meal; instead, allow yourself permission to keep things light and basic. Make a “kitchen sink” salad, smoothie, or snack – just make sure you’re using whole foods. Keeping meals simple allows our body to maximize digestion and nutrient-absorption. Here’s a super simple salad made of arugula, sauerkraut, tomatoes, avocado, and hard-boiled eggs for your dose of greens, probiotics, healthy fat and protein all in one!

FullSizeRender3Eat your veggies: there’s no way around it – veggies are healthy and you must eat them. Don’t fret, you can easily increase your veggie intake in a yummy, easy way. Try making a meal that centers around vegetables instead of meat or pasta, like a meatless stir fry, hearty soup, or holiday smoothie. We don’t often give veggies the opportunity to be the main attraction, but doing so is a super simple, healthy, and affordable way to fuel our bodies. Secondly, try replacing your usual comfort foods with veggie-loaded options. Instead of your go-to mashed potatoes, try cauliflower mash. Forget the french fries and instead roast a new variation of squash, like acorn, delicata, spaghetti, butternut, kobucha, or pumpkin. When you’re urged to grab chips or crackers to snack on, eat crudite to satisfy that craving for a crunch.

Treat yo’self: we’ve said it before and we’ll say again – it’s all about balance. Let go of the labels and ditch the all-or-nothing attitude. Indulging in holiday treats is not only acceptable, it’s actually good for you! Consciously eating food that gives you immense pleasure can fulfill your heart, satisfy your cravings, and feed your soul. Whether it’s a family recipe that you look forward to every year or a new discovery on your journey, choose to indulge wisely and enjoy every single bite.

balancedNews flash: it’s not just about the treats. Or the veggies. Indulge in something that has absolutely nothing to do with food, like a bubble bath, scented candle, holiday movie, pedicure, song download, nature walk, novel, dance party, magazine, TV marathon, or anything that makes you feel pampered and rejuvenated. Just like we deserve to enjoy the cookie, we deserve a break, some self-care, and even a good nap!

Move and be still: we already established that most of us will be indulging a bit this season and that is A ok…as long as we remember to move (ie: exercise) and be still (ie: meditate/sleep/breathe.) Schedule your workouts (and your stillness) as you would meetings and don’t skip ’em. Get your turkey trot on, try a new class, rake leaves, shovel snow…whatever it takes to stay active and accountable. And mindful. Taking time to slow down, live in the moment, and embrace the holiday spirit is equally as important. Combine the moving and the stillness with a yoga class or non-workout workout. Sweat, enjoy, breathe, repeat.

The Freshest Shrimp Tacos

Inspired by fresh local produce at the farmer’s market, Deirdre created a light, colorful summer recipe for one of her very favorites: tacos! These shrimp tacos pack tons of flavor and freshness!

IMG_5708Ingredients: (makes 4 tacos)

  • 8 oz. shredded red or green cabbage (or mix)
  • 1 lb. raw shrimp, washed, peeled, and deveined
  • 16 cherry tomatoes, halved
  • 1 orange
  • 3 Limes
  • 1-2 avocados, diced
  • 1 jalapeño, seeded and diced
  • 2 ears of corn, raw cut right off the cob
  • 2 heaping table spoons of Greek yogurt (or sour cream)
  • A handful of resh cilantro, chopped
  • Cayenne pepper, kosher salt & fresh ground pepper, and hot sauce to taste

For the cabbage corn slaw, combine the following in a large bowl and whisk together until smooth:

  • Juice of 2 limes
  • Juice of 1 orange
  • Greek yogurt/sour cream
  • Diced jalapeño to taste
  • Few splashes of hot sauce
  • 2 tablespoons chopped cilantro
  • A dash of cayenne, salt, and pepper
  • Shredded cabbage
  • Corn

Mix and set aside.

For the shrimp, combine:

  • Shrimp
  • Juice of 1 lime
  • A pinch of cayenne, salt, and pepper
  • Few dashes of hot sauce

Heat a non-stick pan on med-high. Add a splash of olive oil and sauté shrimp until opaque. Build your tacos on warm tortillas of your choice or top a bed of greens for a taco salad! Add avocado, chopped cilantro and hot sauce (optional.) Enjoy!

Candace’s Paleo Energy Bites

When I saw the recipe for these energy bites on Facebook, I knew one thing: had to have ’em. Thanks to Candace for sharing her recipe, we can all have Paleo energy bites any time we want! Enjoy these tasty little bites of nothin but superfoods and superfuel!10494815_10202279531089980_7917817642464921192_nCandace’s Paleo Energy Bites:

  • 1 cup nuts of choice (I use a mix)
  • 1 1/2 cup any unsweetened dried fruit (figs, cherries, dates, apricots, etc. or a mixture)
  • 1/2 teaspoon cinnamon
  • 1/2 cup unsweetened shredded coconut

Combine ingredients in food processor until uniform. Wrap whole mixture in Saran wrap and refrigerate for an hour or so. Remove and roll into balls or “smush” into a pan to make bars. Best stored in the fridge.

Valentine’s Day Dinner for Two

Enjoy this special Asian salmon for two followed by decadent (healthy!) brownies, the perfect Valentine’s Day dinner, thanks to Teresa and Believe in Nutrition!

Asian Salmon for Two

Ingredients:

  • 1 tablespoon miso, preferably white
  • 1 tablespoon mirin, asian rice wine vinegar found in ethnic aisle
  • 1 1/2 teaspoons reduced-sodium soy sauce
  • 1 1/2 teaspoons minced fresh ginger
  • Hot pepper sauce, to taste
  • 8 ounces center-cut salmon fillet, skinned (shrimp or scallops)
  • 1 tablespoon thinly sliced scallions
  • 1 tablespoon chopped fresh cilantro
  • 1 1/2 teaspoons toasted sesame seeds

Position rack in upper third of oven. Preheat broiler. Line small baking pan with foil and coat lightly with cooking spray. Whisk miso, mirin, soy sauce, ginger, and hot sauce in a small bowl until smooth. Place salmon fillets, skinned-side down, in the prepared pan. Brush generously with the miso mixture. Broil the salmon until just cooked through in the center, 6 to 8 minutes. Garnish the salmon with scallions, cilantro and sesame seeds. Serve with grilled vegetables and a salad and enjoy, but save some room for dessert!

 

browniesHealthy Brownies

Each of these brownies is only 100 calories and tastes divine! Here’s what you’ll need:

  • 15 oz can of black beans, rinsed and drained
  • 1/4 cup of unsweetened cocoa powder
  • 1 tsp espresso powder
  • 3/4 cup egg whites
  • 3 Tbsp whole wheat pastry flour
  • 3/4 cup of agave nectar
  • 1 Tbsp unsalted butter
  • 1 tsp vanilla extract
  • A couple teaspoons chopped walnuts (optional for topping)

Mix all the ingredients for a couple minutes in a food processor or blender, except the walnuts. Pour the mix into an 8×8 pan sprayed with cooking spray, and sprinkle the walnuts on top. Bake at 350 degrees for 20 minutes. Bake at 300 degrees for an additional 5 minutes. Let cool before cutting.
