The Skinniest Margarita

Is there anything better than a slightly sweet, perfectly salty, refreshing margarita? I think not. Instead of premade margarita mixes that guarantee TONS of sugar (and a headache) I’ve perfected the super light, but still delicious, margarita. Cheers!

  • 1 can lemon Spindrift sparkling water
  • 1 shot (1-2 ounces) of tequila (my favorite is Casamigos)
  • 3/4 shot lime juice (I like Santa Cruz organic)
  • 1 teaspoon sea salt (optional)
  • 1 lime

To start, coat your glass with salt. Sprinkle a teaspoon of sea salt on a small plate or saucer, slide a lime wedge around the rim of your glass, and spin the rim around in the salted plate. Fill about 1/3 of your glass with ice and add tequila, sparkling water, lime juice, and another lime wedge. If you love that salty goodness like me, add any leftover salt right into your glass and mix. For a spicy version, top with or muddle a few slices of jalapeño pepper. Cheers to a low-sugar, low carb, low hangover marg!

Run the Shelter Island Run!

We’re looking forward to the upcoming Shelter Island 10K Race! Charmingly picturesque Shelter Island sets the stage for the 36th annual event on Saturday, June 20th at 5:30pm. The historic race has been touted as one of the country’s most beautiful runs by Runner’s World magazine…and anyone that’s spent time on Shelter Island can surely validate that!

10kIn addition to the surrounding beauty, this event is fun for all and directly benefits a variety of local causes, from scholarships and grants for Shelter Island Schools to charities such as East End Hospice and Reach Within. The Shelter Island 10K is proud to have the 2014 Boston Marathon winner and Olympic Silver Medalist, Meb Keflezighi, along with fellow elite runners Katie DiCamillo, Hirut Guangul and Amos Sang run in this year’s race.

Happy National Kale Day!

image(9)Today is the day. Wednesday, October 2nd officially marks the celebration of…KALE! Yes, kale is everywhere. Kale is trendy. Kale is crunchy. Kale is the king of superfoods. If you haven’t jumped on the kale train, you just may reconsider once you’ve tried the classic green juice’s indulgent, crunchy, yummy-in-my-tummy friend, kale chips!

Yummy (in my tummy) Kale Chips: Preheat oven to 325 degrees and cover a cookie sheet with parchment paper. Cut stems off one head of kale, wash and dry. Cut into pieces and spread out on cookie sheet. Massage kale with coconut oil (no more than a tablespoon total.) Sprinkle with garlic powder, salt, and pepper. Bake for about 20 minutes or until crisps. Let cool and serve as chips. So crispy, so light, so healthy…SO good!
