Vegan Pesto Zoodles with Fresh Tomatoes

Zoodles are oodles of fun, especially during tomato season! Upgrade any pasta dish with veggie noodles for a healthier meal that’s low in carbs, calories, and high in fiber. This one just happens to be meatless, vegetarian, vegan, and you won’t even miss the meat or cheese one bit! I used the inspiralizer to make noodles out of zucchini and summer squash before adding fresh tomatoes and a vegan pesto that is out of this world. Ready to be inspiralized?

FullSizeRender_3

Ingredients: (makes two servings)

  • 1 zucchini
  • 1 summer squash
  • 1 large tomato
  • 1/2 cup arugula
  • 1/2 cup fresh basil leaves
  • 1 tablespoon pine nuts
  • 1/3 avocado
  • 2 tablespoons olive oil
  • 1 teaspoon nutritional yeast (optional)
  • 1 lemon
  • 1 teaspoon sea salt

Instructions:

Use Inspiralizer (or your tool of choice) to make noodles out of the zucchini and squash. Put noodles aside on a plate, sprinkle sea salt over noodles, and let sit to drain some of the liquid. For pesto, in a Vitamix, blender, or food processor, combine arugula, basil, nuts, avocado, 1 tablespoon olive oil, nutritional  yeast, and the lemon (remove seeds, optional to use juice or peel as well like we do.) Add a few spoonfuls of water if needed, so that mixture blends together.

Put zoodles in a pan on the stove over low heat and add remaining olive oil. Once they start to cook and soften, add pesto and cubed tomato. (For added protein and creaminess, you can also add one egg to the pan at this time.)

Mix over heat a few more minutes until noodles are all covered in pesto and tomatoes have softened. Remove from heat and serve in pasta bowl, garnish with basil leaves. Bon appetit!

One Healthy (or not so much) Paris Recap

Travel does wonders for the mind and soul, especially traveling to Paris! Here’s a quick recap of our trip along with some healthy tidbits we can all learn from the Parisians.

IMG_5103

Say this three times fast: fresh French food. Food is fresh in France. Whether it’s fish, fruit, veggies, meat, bread, or wine, fresh and locally made is the standard. You can taste the difference, from the simplest salad to a baguette to a gourmet meal.

IMG_5172
Restaurant menus change often because seasonal goods are preferred and expected. Everything is less processed. Interestingly, people sensitive to gluten or dairy often don’t feel the effects abroad, which leads us to believe that it may actually be the processing and not the food itself.

IMG_5082

During the cooking class we took, the first 90 minutes was dedicated to walking through the market, the butcher, the cheese vendor, and the fish market, seeking the freshest of fresh, which included dover sole, asparagus, tomatoes, and the herbs in the vinaigrette.

IMG_5078

As a nutritionist, I often encourage clients to grocery shop with a list; having a strategy as to avoid extras like Oreos sneaking into the cart. Interestingly, the people of Paris shop for groceries almost every day. Instead of stocking up on bulk items, they tend to buy just what they need for that nights’ meal, every day. Less freezing, thawing, bulking, and money. Smart.

IMG_5077

Regulations on meat and poultry are also more specific and there are simply no antibiotics or GMOs allowed…at all. Again, smart. As for wine,  there’s a push for biodynamic/organic wine, made without sulfates or chemicals. The wine tastes cleaner, goes down smoother, and doesn’t result in a headache or hangover the following day. Super smart.

Being that we live in such a young country, it’s amazing to see such extensive history, like the palace of Versailles. Paris exemplifies the statement “worth the wait.” From the architecture to the wine and cheese, Paris is about the end result, not instant gratification.

FullSizeRender(60)

Cheese and refined sugar. Two things I rarely indulge in, but vacation (especially Paris!) calls for  complete indulgence. And with that, it’s time to get back on track with all things green.

IMG_5119

Last note: one thing we’ve far surpassed is our incidence of smoking. Ew. But if sitting is the new smoking, all of the walking around the beautiful city may just cancel it out? Definitely not promoting smoking – less smoking, more walking. And remember, Paris is always a good idea.

Antigua Adventures and Island Yoga

After a brief hiatus, much-needed internet cleanse, and a big birthday celebrated with family, friends, and cake, we’re back in business (and ready for spring to be honest!)

IMG_0082

Feeling rested, restored, and rejuvenated, it’s time to reminisce a little, shall we? Antigua Adventure yoga and wellness retreat was absolutely incredible and I’m excited to share our journey…and some super special island yoga so that you can experience it right along with us!

IMG_0111

Welcome to our private yoga studio, where we enjoyed daily yoga classes and private sessions in a jungle of palm trees with the vibrant sunshine and cool island breeze surrounding us.

IMG_0342Like tree pose, the retreat as a whole encouraged us to get grounded, root down, balance, grown, and flow. We were so lucky to have the Hamptons’ best yogis (Jenna Raynell, Erica Velasquez, and guest instructor Lois Nesbitt) guiding us through our daily practice!

IMG_0090

Following our morning yoga, which set the tone for an amazing day ahead, we enjoyed some seriously delicious eats, like local produce, refreshing smoothies, and fresh-caught seafood. As the Nutritionist on board, I prepared healthy eats to fuel our bodies and satisfy our souls!

IMG_0047

We met lots of new friends throughout the week and became a little family in no time. The days were full of island adventures like paddle boarding, swimming, zip lining, hiking, and tons of R&R. We soaked up the sun at Pigeon Beach down the street or our own pools right outside our villa.

IMG_0150Our group was pampered, well-fed, and caffeinated with awesome gifts thanks to our amazing sponsors: Hampton Coffee Company, Pure & Peaceful, Hamptons Handpoured, RX Bar, Hampton Sun, Boat Hampton, Health Warrior, Wolffer Vineyard Estate, and Megan’s Morsels!

IMG_0246

What an awesome crew, each one added something unique and inspiring to the group. We ventured out together for dinners, drinks, live music, and a breathtaking sunset yoga class on the water.

That photo pretty much sums it up – our Antigua Adventure was absolutely amazing. Keep your eyes peeled for more amazing retreat offerings to come – both near and far! In the mean time, here’s a present from the lovely Jenna Raynell –  60 minute Gentle Island Flow straight from Antigua!

The Freshest Shrimp Tacos

Inspired by fresh local produce at the farmer’s market, Deirdre created a light, colorful summer recipe for one of her very favorites: tacos! These shrimp tacos pack tons of flavor and freshness!

IMG_5708Ingredients: (makes 4 tacos)

  • 8 oz. shredded red or green cabbage (or mix)
  • 1 lb. raw shrimp, washed, peeled, and deveined
  • 16 cherry tomatoes, halved
  • 1 orange
  • 3 Limes
  • 1-2 avocados, diced
  • 1 jalapeño, seeded and diced
  • 2 ears of corn, raw cut right off the cob
  • 2 heaping table spoons of Greek yogurt (or sour cream)
  • A handful of resh cilantro, chopped
  • Cayenne pepper, kosher salt & fresh ground pepper, and hot sauce to taste

For the cabbage corn slaw, combine the following in a large bowl and whisk together until smooth:

  • Juice of 2 limes
  • Juice of 1 orange
  • Greek yogurt/sour cream
  • Diced jalapeño to taste
  • Few splashes of hot sauce
  • 2 tablespoons chopped cilantro
  • A dash of cayenne, salt, and pepper
  • Shredded cabbage
  • Corn

Mix and set aside.

For the shrimp, combine:

  • Shrimp
  • Juice of 1 lime
  • A pinch of cayenne, salt, and pepper
  • Few dashes of hot sauce

Heat a non-stick pan on med-high. Add a splash of olive oil and sauté shrimp until opaque. Build your tacos on warm tortillas of your choice or top a bed of greens for a taco salad! Add avocado, chopped cilantro and hot sauce (optional.) Enjoy!

Nothin’ Like EVOO

10702069_904476514773_3840381980300393958_nCiao bella! Although I am a huge fan of all things coconut oil, there’s just nothin’ like the one and only EVOO. Olive oil, rich in phytonutrients and antioxidants, is a fundamental part of the Mediterranean Diet. My recent trip to Italy for our honeymoon spiked quite a rekindling for my relationship with olive oil. I’ve always used and loved it, but my appreciation for the oil grew stronger as Italians just don’t live without it. From salad to octopus, (yup) pasta to dessert, olive oil was as essential as water (and wine!) at every meal. Every bite was a bit tastier, richer, and more satiating.

10689850_904476659483_2449018094796810023_nMaking pasta from scratch in Rome!

Olive oil is a monounsaturated fat – aka a healthy fat. Although it is very high in fat content, olive oil’s health benefits are unparalleled. A diet consisting of EVOO regularly is correlated with lower rates of heart disease, diabetes, stroke, cancer, and Alzheimer’s. The phytonutrients in olive oil help to strengthen and protect the blood vessel cells, prevent blockages, and aid digestion. It also transforms a bowl of spaghetti into a work of culinary magic. Bellissima!

1017740_904477602593_2597989234029221327_nWhy EVOO? Extra virgin olive oil is fresh-pressed, less processed, and more pure than regular olive oil. EVOO has been proven to reduce inflammation, cholesterol, and blood pressure. So, instead of butter, margarine, dressing, sauce, etc., turn to EVOO. Olive oil can also be used to treat a sunburn, condition hair, moisturize skin and lips, rid stickiness, polish surfaces, fix a jam, remove eye makeup, and so much more. Who knew?!
