Creamsicle Power Smoothie

Spring is arguably the most promising of seasons, showing signs of growth, vibrance, sunshine, and rejuvenation. Unfortunately, spring also brings about unreliable weather, the peak of allergy season, and those end-of-flu-season germs that have us needing some serious Vitamin C. Ditch the pills and give your immune system a healthy boost with this tasty treat instead!

Ingredients:

  • 1 orange or 2 clementines or 1 grapefruit (peeled)
  • juice of 1/4 lemon
  • 1/2 teaspoon vanilla extract
  • 1 scoop high quality vanilla protein powder
  • 1/2 frozen banana
  • 3/4 cup vanilla almond milk or coconut water
  • 1 handful romaine lettuce (optional)
  • dash of turmeric or small piece of turmeric root (optional)
  • ice cubes (optional)

Add all ingredients to a blender, starting with the liquids. Blend until smooth. Add ice cubes if you wish. Pour into a glass and enjoy, knowing that you’re feeding your body right.

Paleo Lemon Blueberry Loaf

I just love anything (and everything) with a tangy lemon flavor. Lemon squares, you’re SO GOOD…but you’re SO BAD! This guilt-free, grain-free paleo bread with lemon, blueberries, and very little sugar…now that’s a show stopper. This deliciousness can be made as a loaf or muffins, crunchy on the outside and soft and crumbly on the inside. Does it get any better?!

Ingredients:

  • 1 cup almond or coconut flour (or healthy flour of choice)
  • 1/4 cup arrowroot powder
  • 1/3 cup raw cashews
  • 4 eggs
  • 1/4 cup coconut oil
  • 1/4 cup unsweetened applesauce
  • 1 teaspoon baking soda
  • 2 or 3 lemons (depending on how lemon-y you like)
  • 1 cup blueberries
  • 1 tablespoon honey
  • pinch of sea salt

Preheat oven to 350 degrees. Set aside blueberries and lemons. Combine all other ingredients in food processor (I use a Vitamix.) Wash lemons and grate the zest of one lemon into mixture. Cut lemons in half, remove seeds, and squeeze juice into mixture. Continue to blend until batter is consistent and smooth. Add blueberries and stir by hand. Grease loaf or muffin pan with coconut oil and pour batter in, leaving about an inch on top for loaf to rise. (If you have leftover batter, it can be used for muffins or pancakes.) Bake for 35 minutes (25 for muffins!) and check with a fork to make sure it’s cooked through, if not, continue to bake another 8-10 minutes. Once top has started to brown, remove from oven and let cool for at least 15 minutes before removing from pan. Refrigerate leftovers to keep fresh. Enjoy this sweet and sour snack!

One Healthy Gingerbread Recipe

All I have been wanting to eat lately is food that tastes like Christmas…anyone else?! Spices like cinnamon, clove, ginger, and foods like citrus fruits, pomegranates, and cranberries are lighting up my life. Homemade gingerbread, however, is brand new to me…until now!

Growing up, we always had gingerbread in the house this time of year, but I don’t even know what was in it. After looking at several gingerbread recipes online, I decided to create my own version with more spices and less sugar. Just one taste of this healthy homemade gingerbread and I know it will be a new holiday tradition. I love it THAT much and you will too!

The best part is that this gingerbread contains no granular sugar, just honey, maple syrup, and molasses. (To be honest, I don’t even think I own sugar. There’s just no need for it when there are delicious natural substitutions out there.)

It’s also dairy free and can be made gluten-free as well! Let’s get started, shall we?!

One Healthy Gingerbread Recipe:

Dry Ingredients:

  • 2 1/2  cups healthy flour of choice (I used spelt)
  • 2 tbsp cinnamon
  • 1 tsp ground cloves
  • 2 tsp baking powder
  • 1 tsp baking soda
  • pinch of salt

Wet Ingredients:

  • 1/4 cup molasses
  • 1/4 cup maple syrup
  • 1 cup unsweetened apple sauce
  • 2 eggs
  • 1 tsp vanilla extract
  • 1-2 tbsp grated fresh ginger

Toppings:

  • Pomegranate seeds
  • canned full fat coconut milk
  • 2 tbsp honey
  • 1 tsp vanilla extract

Directions:
Preheat oven to 350 degrees. Mix dry ingredients, mix wet ingredients, then mix together. You don’t need a fancy mixer, a regular old fork will do. Spray a loaf pan with cooking spray and fill the pan with batter, leaving a few inches at the top (this stuff rises!) Bake for 45-50 minutes.

To make the frosting, skim the top half of the coconut milk from the can (be sure not to shake it as to only get the thick paste on top). Add in honey, (or maple syrup if you prefer) vanilla extract, and whip it together. This will make a thicker frosting. If you prefer a thinner frosting to drizzle on the bread instead, you can water it down with the thinner coconut milk from the can (or a little bit of water) use 1-2 tablespoons at a time until you get the right consistency.

Once the bread is cool, frost and top with pomegranate seeds, which are equally nutritious, delicious, and festive. Feel free to get creative and try different toppings, like chopped nuts, red and green sprinkles, crushed candy canes, or cinnamon. Make one loaf to have at home and others as gifts. The perfect Christmas breakfast or healthy dessert this time of year!

Zucchini + Oats = ZOATS

What’s a zoat?! Much like zoodles are noodles, zoats are oats made out of zucchini (plus, they’re fun to say.) While they’re not the prettiest of breakfast bowls, they sure are delicious and super, duper healthy, without any gluten, dairy, or sugar! What’s better than polishing off a cozy breakfast knowing that you’ve already gotten in a good serving of veggies? Nada.

Breakfast Zoats (makes 1 large or 2 smaller portions)

Ingredients:

  • 1 zucchini
  • 2 tablespoons oats
  • 1 heaping spoonful of flaxmeal
  • 1/2 mashed banana
  • 1/2 cup almond milk
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon maple syrup or honey
  • 1 tablespoon walnuts or nuts of choice
  • optional: 1 egg or 1 scoop collagen peptides or protein powder of choice

Grate zucchini into a saucepan on heated stove top. Add remaining ingredients, mix together, and simmer until liquid is absorbed. Transfer to bowl and enjoy warm.

Pumpkin Spice Apple Cinnamon Oatmeal

This breakfast recipe is not only easy and healthy, but also clearly the epitome of fall. Autumn is surely the season for all things pumpkin spice and apple cinnamon. Breakfast should fuel your day with long-lasting energy and deliciousness. Check and check. Let’s dig in, shall we?!

Ingredients:

  • 1/2 cup oats
  • 1/2 cup almond milk or water (or milk of choice)
  • 1/3 cup pumpkin puree
  • 1 apple chopped or 1/3 cup applesauce
  • 1/2 teaspoon cinnamon
  • dash of pumpkin pie spice
  • 1/8 teaspoon salt
  • 1 teaspoon honey or maple syrup (optional)
  • 1 tablespoon pepitas (pumpkin seeds) chopped walnuts, or pecans

Instructions:

Add oats to liquid in pot on stove on medium heat. Once oats begin to cook and thicken, turn heat to low and add all other ingredients. Stir and finish cooking (should take about 5-8 minutes.) Once the oatmeal is thick, remove from heat and let cool a minute before serving. Feel free to top oatmeal (just for visual appeal) with apple slices and cinnamon, more pumpkin, sprinkled nuts, or nothing at all. Enjoy this hearty fall-flavored meal!

Sweet Potato Protein Muffins

These sweet potato muffins were an insta hit! Packed with protein, fiber, and sweet flavor, you can’t go wrong whipping up a batch of these babies for an easy breakfast or snack! Dont’ be afraid to substitute the sweet potatoes for pumpkin as well!

Sweet Potato Protein Muffins:

Makes 6 regular sized muffins. Note that I used 1 can of organic sweet potato puree; however, you could use 1-2 baked sweet potatoes – equal to about 1.5 cups of sweet potato if you prefer.

Pre-heat oven 350 degrees

Ingredients:

  • 1 can sweet potato puree or the equivalent of 1.5 cups of baked sweet potato (as long as you have a good blender, you can leave skin on – it’s the healthiest part!)
  • 1/2 cup raw rolled oats
  • 5 eggs
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon / or a few drops of vanilla extract
  • 3/4 teaspoon honey
  • 2 tablespoons almond milk

Instructions:
blend or mix the above (I used Vitamix)
lightly coat muffin tin with coconut oil and pour mixture into pan, filling muffin just over halfway
bake muffins at 350 degrees for 35-45 minutes. Once muffins golden on top, check with a fork or knife to make sure that muffin is cooked through. Let cool and remove from tins. Enjoy and refrigerate leftovers.

Kid-Friendly Breakfast Ideas

Back to school means back to our routines, alarm clocks, and catching the bus. Although it can be tough to get the kids to have a decent meal before school, we all know that breakfast is the most important meal of the day. Children need fuel for school, both for their brain and body to function. Eating a healthy breakfast stabilizes blood sugar, energy, mood, and increases focus.

While there are hundreds of packaged “breakfast” foods on the market, making breakfast at home ensures much healthier ingredients as opposed to sugar and chemicals you’ll find in most pre-packaged options (ie: Pop-tarts, granola bars, and most kid-friendly cereals.)  All of these kid-friendly ideas take 10 minutes or less to make and can be taken on-the-go!

1. PB & J Smoothie (makes 1 serving):

In a blender, combine:

  • ¾ cup strawberries (fresh or frozen)
  • 2 tablespoons peanut butter or almond butter
  • ½ cup plain yogurt
  • 1 cup milk of choice
  • optional: ½ frozen banana
  • optional:

Instructions: add ice cubes for desired temperature/consistency and serve in a glass once blended. Cheers!

2. Healthy Pancakes or Waffles (makes 2 servings):

In a bowl or blender, combine:

  • ¾ cup whole-grain flour of choice ( or try coconut or almond flour for gluten-free)
  • 2 eggs
  • ½ teaspoon vanilla extract
  • optional: dash of cinnamon

Instructions: lightly coat heated pan/skillet with butter/coconut oil/cooking spray and add pancake mix in small circles. Flip once pancake solidifies (typically 4-5 minutes) and let cook until desired crispness (2-3 minutes.) Plate pancakes and serve with a small amount of honey, natural syrup, or butter. Tastes like a treat, but healthy enough for everyday!

3. Overnight Oats (prepare the night before, makes 2 servings):

In a bowl, jar, or Tupperware, combine:

  • 1 cup oats
  • ½ cup milk of choice
  • ½ teaspoon vanilla extract
  • dash of cinnamon
  • optional: 1 tablespoon chia seeds (to help thicken and adds nutrients)
  • optional: add fruit and/or nuts/nut butter

Instructions: simply stir together the ingredients and refrigerate overnight for an instant healthy breakfast in the morning!

Peppermint Mocha Chia Pudding

Wow. Peppermint, chocolate, and coffee culminate to make this perfectly decadent combination. Did we mention it’s super healthy too? Nutritious and delicious anytime of day! With no added sugar, this dessert-like treat can even be enjoyed for breakfast!

Ingredients: (makes one meal serving or 2 smaller snack/dessert servings)

  • 2/3 cup almond or coconut milk (make your own!)
  • 4 tablespoons chia seeds
  • 2-4 tablespoons coffee (cool/room temp)
  • 2 teaspoons cacoa powder
  • 2 small drops peppermint extract
  • 1/3 teaspoon cinnamon
  • 1/4 teaspoon sea salt (optional)

Mix all ingredients together and refrigerate overnight. Mixture will thicken to pudding. Remove, stir again, and serve chilled. Enjoy this decadent (super healthy!) sweet treat!

Super Yummy Energy Bites

Introducing your new favorite {super yummy} snack. Great for breakfast, pre and post-workout snack, and sweet treat, these puppies are full of power and flavor! Also, they taste like cookie dough…Just wait. Luckily, you only have to wait 10 minutes to enjoy these cute little nibbles!

Ingredients: (makes about 15 bites)

  • 1 cup raw oats
  • 1 tablespoon coconut oil
  • 1 teaspoon vanilla extract
  • 1/4 cup nut or seed butter of choice
  • 3 dates (pitted)
  • 1 tablespoon hemp seeds
  • 1 tablespoon chia seeds
  • 1 tablespoon shredded coconut
  • 2 tablespoons goji berries and/or apricots (can use raisins or another dried fruit)
  • 1/4 teaspoon sea salt (optional)
  • 1 tablespoon high-quality protein powder (optional for additional protein/post-workout)

Combine coconut oil, nut butter, vanilla, dates, salt, and half of the oats in a food processor or Vitamix. Once smooth, add the remaining ingredients and pulse until the mixture is consistent, but not completely smooth. Remove mixture and roll into balls about the size of a golf ball. Plate them in the fridge and let sit at least 10 minutes. Devour. You’re welcome 🙂

Optional add-ins for varied flavor: 1 teaspoon matcha powder, 1 drop peppermint oil, 1 tablespoon cacoa nibs or dark chocolate chips, 2 tablespoons pumpkin, 1/4 lemon, 1 slice ginger, 1 teaspoon maca powder, etc. These babies are super versatile – get it?
